Low Carb Chicken Casserole (I Know It Has Been A While...)

It has been a long time since I posted on this blog. I decided to post the recipe I made tonight. I made this to take to work for lunch this week. I could not find exactly what I was looking for so I combined ideas from several recipes using ingredients that were already in the house and this is what I came up with.

This is my first attempt at posting a recipe and I did not really measure anything.

Low Carb Chicken Casserole


Ingredients I used:

1 head of cauliflower, riced
Olive oil non stick spray
Spices: Salt, pepper, basil, parsley, chopped onion, & Tastefully Simple Spinach and Herb Mix
About two pounds of chicken breasts cut into cubes
Olive Oil
One can of Campbells Cream of Chicken with Herbs
1 cup of shredded cheddar cheese

I started out by "ricing" the cauliflower. I sprayed a 8 1/2" x 11 1/2" x 2" glass dish with the Olive Oil non stick spray and filled it evenly with the "riced" cauliflower. I turned the oven on 325 degrees and placed the dish with the cauliflower in the oven while it was heating up to warm the cauliflower while I prepared the chicken. After about 10 minutes I took it out and added random amounts of the spices I listed.


Next I cut the chicken into cubes and cooked the chicken in a little olive oil in the frying pan.


There was a lot of chicken "juice" in the pan when it was done cooking. I did not drain any of it. I added one can of Campbells Cream of Chicken with Herbs to the chicken.


After this mixture was heated up I poured it over the top of the cauliflower and spices and spread it evenly.


Next top with the cheddar cheese.


Bake @ 325 degrees for 20 Minutes


I divided this into 5 servings to take to work but I did have a small serving tonight for the "taste test". This was pretty good so I decided to post it. Enjoy!
