I just learned about EBATES. You shop online through the site and you earn CASH BACK!!! There are many stores to choose from. You can even get 2% cash back at Victoria's Secret!!!

***I just found this old post saved as a draft...in case anyone is interested. ***

I don't shop a lot but when I do shop online I always check to see if any EBATES are available for my purchase. Who can pass up free money even if it is only a couple of dollars?? Not me.

Looks like it is time for a post...

It appears that my last post was 2 1/2 years ago... I had a thought that I needed to share. For anyone looking for a GMO free whey protein - I found one that I really like. I have been using it for almost a year now and am very happy with it.

It is called Bodylogix Natural Whey Protein. Natural Dark Chocolate is my flavor.

I use this every morning in my protein shake that I have for breakfast. I mix it with unsweetened almond milk, unsweetened coca powder, a few drops of stevia since the cocoa powder is unsweetened, a glob of peanut butter, and some ice cubes. Yum!

***I would like to add an update to my post from 4 years ago about the "mystery illness"***

After eliminating random foods from my diet I discovered the cause of my "mystery illness" was black beans. I was eating black beans in almost everything and once I stopped eating black beans the problem went away. I now only eat black beans occasionally, and my body is okay with that.

That's all for now. Stay tuned for another post in about two years...

Low Carb Chicken Casserole (I Know It Has Been A While...)

It has been a long time since I posted on this blog. I decided to post the recipe I made tonight. I made this to take to work for lunch this week. I could not find exactly what I was looking for so I combined ideas from several recipes using ingredients that were already in the house and this is what I came up with.

This is my first attempt at posting a recipe and I did not really measure anything.

Low Carb Chicken Casserole

Ingredients I used:

1 head of cauliflower, riced
Olive oil non stick spray
Spices: Salt, pepper, basil, parsley, chopped onion, & Tastefully Simple Spinach and Herb Mix
About two pounds of chicken breasts cut into cubes
Olive Oil
One can of Campbells Cream of Chicken with Herbs
1 cup of shredded cheddar cheese

I started out by "ricing" the cauliflower. I sprayed a 8 1/2" x 11 1/2" x 2" glass dish with the Olive Oil non stick spray and filled it evenly with the "riced" cauliflower. I turned the oven on 325 degrees and placed the dish with the cauliflower in the oven while it was heating up to warm the cauliflower while I prepared the chicken. After about 10 minutes I took it out and added random amounts of the spices I listed.

Next I cut the chicken into cubes and cooked the chicken in a little olive oil in the frying pan.

There was a lot of chicken "juice" in the pan when it was done cooking. I did not drain any of it. I added one can of Campbells Cream of Chicken with Herbs to the chicken.

After this mixture was heated up I poured it over the top of the cauliflower and spices and spread it evenly.

Next top with the cheddar cheese.

Bake @ 325 degrees for 20 Minutes

I divided this into 5 servings to take to work but I did have a small serving tonight for the "taste test". This was pretty good so I decided to post it. Enjoy!
